This simple dish features pears poached in honey, topped with walnuts and mint. Besides being easy and delicious, with just the right amount of sweetness, pears have a lot to offer your health.

INGREDIENTS
1/2 cup honey
4 cups water
1 teaspoon vanilla extract
2 Bartlett pears
1/2 cup Greek yogurt or Coconut yogurt
1/4 cup walnuts, chopped
mint for garnish
INSTRUCTIONS
Combine honey, water and vanilla in a large saucepan and bring to a boil. Lower the heat and simmer 10 minutes. Add the pears in whole and simmer until tender, about 20 minutes.
Remove the pan from heat and put the pears in a bowl. Pour the juices over the top. Let sit until cool, then refrigerate for one hour.
To serve, peel the pears and cut into wedges. Remove the stem and seeds. Put a large dollop of yogurt or coconut yogurt onto a plate and arrange two pear slices over the top. Drizzle with honey and sprinkle walnuts and chopped mint over the top.
